This is one of those recipes that is a great breakfast on its own and a fantastic lunch or dinner when served with a nice little salad of mixed greens and cherry tomatoes.

I am lucky to have a number of girlfriends who are fantastic cooks. The greek frittata recipe originally came from my girl Janna. Each time I have dinner at her house I am asking “and how the heck did you think of this idea??” So I am sure I will be featuring a number of her creations on the blog.

Instructions
  1. Heat oven to 350F.
  2. Start by melting coconut oil in a large frying pan. Add onion and sauté until translucent. Toss in 5 large handfuls of spinach and stir until wilted. Transfer onion and spinach mixture to the bottom of a greased 9" round baking dish.
  3. Whisk eggs and egg whites in a bowl, add sundried tomatoes, kalamata olives, feta, salt and pepper. Stir until combined and pour over top of spinach and onion.
  4. Bake for 40 minutes.
