This is one of those recipes that is a great breakfast on its own and a fantastic lunch or dinner when served with a nice little salad of mixed greens and cherry tomatoes.
I am lucky to have a number of girlfriends who are fantastic cooks. The greek frittata recipe originally came from my girl Janna. Each time I have dinner at her house I am asking “and how the heck did you think of this idea??” So I am sure I will be featuring a number of her creations on the blog.
