The idea of the #onebowlmeal came during one of my busiest weeks this past November. Preparing for our holiday challenge, packing for a trip, battling a cold, dealing with a car accident, you know – life!

Enter, the #onebowlmeal. An quick and simple way to get protein, fibre and fat with minimal prep or clean up required.

Instructions
  1. Sauté red and yellow peppers in a pan with a splash of olive oil. Add to bowl.
  2. Sauté kale with 2 tbsp water to wilt. Add to bowl.
  3. Poach two eggs, sprinkle with salt and pepper to taste. Add to bowl.
Recipe Notes

Optional: Sauté 3 slices good quality salami in pan before kale, then add the kale and finish cooking.
