Superfood Chicken Salad

This┬ásalad is one of my go-to’s when I know I want a super healthy lunch or dinner, but I need it to be quick. You can easily change out the veggies or top with other nuts or seeds, but the ‘superfood’ name for this recipe comes from the fact that I used hemp hearts, sprouts and kale. These three foods pack a ton of nutritional value and taste great too.

  1. Get your chop on! Finely chop kale and lettuce and place into a large bowl.
  2. Grate or dice the carrot. Dice the cucumber. Add to bowl
  3. Top salad with hemp hearts, sprouts, rotisserie chicken and cilantro.
  4. Use any dressing you desire. I like a good olive oil, balsamic reduction, a bit of fresh lemon juice and fresh cracked black pepper.
Recipe Notes

Feel free to add in additional veggies, but be sure to always have a herb of some sort in this salad as it really ups the flavour.
