On any given night in our house, we're eating some permutation of a roasted veggie tray. Whether it's roasted baby potatoes with rosemary, or our family favourite of just broccoli, salt, pepper and olive oil - there's almost always a tray of veggies roasting away in our oven.
Lately I've had quite the love affair with roasted broccoli spears. My 15 month old loves them too, so we've been eating a full tray of roasted broccoli at dinner time to go along with whatever else we've got on our plates that night.
This roasted veggie tray is super easy to prepare, it takes just a bit of chopping and about an hour in the oven. It's the perfect recipe when you need to feed a big group (just double it!) all while giving you time to prep other dishes. It's the ideal balance of starchy and flavourful veggies.
