Zucchini Pizza Boats

Zucchini Pizza Boats

  • 4 large zucchini halved lengthwise
  • 1 lb lean ground turkey
  • 1/4 cup onion chopped
  • 2 tsp garlic powder
  • 1 cup crushed tomatoes
  • 1/2 cup mozzarella cheese shredded
  • 2 tbsp basil
  • 2 tsp oregano
  • 1/2 cup parmesan cheese shredded
  • salt + pepper to taste


  • Preheat oven to 425F and grease a 13 x 9 baking dish.
  • In a skillet, cook ground turkey, onion, salt, pepper and garlic powder. When turkey is thoroughly cooked, add crushed tomatoes and cook for 5 minutes until sauce thickens.
  • Scoop the seeds from the middle of the zucchini using a spoon to create a zucchini 'boat' then place the boats side by side in baking dish.
  • Spoon turkey mixture into each boat, top with mozzarella and parmesan and cook for 20 minutes until cheese is brown and bubbly.
