Curried Cauliflower and Feta

A very simple side dish packed with fibre to fill you up!

Cauliflower is a cruciferous vegetable which offers many anti-cancer properties and is low in starch to help balance our blood sugar. Growing up I was never a fan of cauliflower. I would eat kale by the truck load but ‘ghost broccoli’? Hmmm not so much. This recipe completely changed my tune on how I feel about cauliflower. This one rarely lasts to the following day for leftovers as it’s such a fan favourite.

Curried Cauliflower and Feta

Prep Time: 5 minutes
Cook Time: 35 minutes
Total Time: 40 minutes
Course: Post-Workout, Side Dish

Servings: 2 servings

Ingredients

  • 1 head cauliflower washed and chopped into bite sized pieces
  • 1 tbsp curry powder
  • 1 tbsp turmeric
  • 3 tbsp coconut oil
  • 1/2 cup feta crumbled
  • sprinkle chopped walnuts (optional)

Instructions

  • Heat coconut oil and curry powder in a frying pan, add cauliflower and mix until coated.
  • Transfer to baking sheet and cook at 375F for 35-40 minutes. With 10 minutes left in the cooking time, top with feta and walnuts.
